How would we tell the difference between birthing and dieing?

What would a young body look like? Would it be irregularly shaped, like an asteroid, made of loosely packed matter? At what point would it become capable of a leveled surface? Or does radial symmetry prove that the body had to have been molten in the past, proving by extension that it used to be a star?
